Vegan Pasta Primavera

  • 12 Morningstar Farms® Veggie Grill™ Vegan Burgers, cooked according to package instructions, julienne-cut
  • 36 oz. uncooked pasta of choice
  • 4 cups soy milk
  • ½ lb. soy cheese slices
  • 1 cup sugar snap peas
  • 1 pt. grape tomatoes
  • 2 zucchinis, julienne-cut
  • 2 yellow squashes, julienne-cut
  • 2 carrots, julienne-cut
  • salt and pepper to taste
  • 1 cup fresh basil leaves, finely chopped
  • 12 sprigs of basil

  1. Bring a large sauce pan of water to a boil and cook the pasta according to instructions. Drain pasta and set aside.
  2. In a sauce pan, bring soy milk to a boil. Add soy cheese and chopped basil until fully combined, and cook about 6 minutes.
  3. Add pasta, vegetables and Morningstar Farms® Veggie Grill™ Vegan Burger strips, and cook until vegetables are done, about 3 minutes.
  4. Remove from heat. Season with salt and pepper to taste.
  5. Garnish with basil sprigs.
