Steamed Alaskan Salmon with Leeks and Roasted Tomatoes Original Recipe

Ingredients:

  • Chicken stock, as needed
  • Leeks (cut into rings)
  • 1 tsp. of California Olive Oil extra virgin olive oil
  • ¼ cup of red, green and yellow bell pepper (chopped into small cubes)
  • 4 ozs. Alaskan salmon
  • 6 roasted cherry tomatoes (Season and stick in oven for 5 minutes)
  • Capers
  • 2 tsps. finely chopped thyme
  • Salt and pepper to taste
Directions:
  1. Heat skillet until hot. Combine ingredients 1–4, adding about an inch of stock to the pan, and cook for 5 minutes. Add a little more stock if most has evaporated and reheat. Rest salmon in skillet, cover and reduce heat to medium for 3 minutes.
  2. Combine ingredients 6-8 and continue to cook for 5 additional minutes.
  3. To plate: Create a bed with vegetables and set salmon on top.
  4. Finish with drizzling California Olive Oil extra virgin olive oil on top. Sprinkle with salt and pepper to taste.
