Santa Fe Breakfast Frittata

Ingredients:

  • 48 oz. Morningstar Farms® Veggie Breakfast Sausage Patties,
  • ¼ in. diced, divided, 2 oz. per frittata
  • 12 oz. vegetable oil, ½ oz. per frittata
  • 24 oz. black beans (canned), ½ oz. per frittata
  • 12 oz. Monterey jack cheese, ½ oz. per frittata
  • 12 oz. pepper jack cheese, ½ oz. per frittata
  • 12 oz. red peppers, julienne-cut, ½ oz. per frittata
  • 12 oz. green peppers, julienne-cut, ½ oz. per frittata
  • 72 eggs, 3 eggs per frittata
  • 24 oz. heavy cream, 1 oz. per frittata
  • 4 avocados, sliced, 2 slices per frittata
  • 24 lime wedges, 1 per frittata
  • 24 Tbsp. sour cream, 1 Tbsp. per frittata
  • 24 Tbsp. tomato salsa, 1 Tbsp. per frittata
  • 24 Tbsp. green onions, bias-cut, 1 Tbsp. per frittata
Directions:
  1. In a 6" non-stick sauté pan, combine and cook oil, Morningstar Farms® Veggie Breakfast Sausage Patties, peppers and black beans for 4 minutes.
  2. Whisk together eggs and heavy cream.
  3. Pour egg mixture over sausage mixture. Sprinkle cheese on top.
  4. Place under broiler. Cook for 4 minutes.
  5. Remove from pan and garnish with sour cream, avocado, lime wedge, salsa and green onions.
